- Warm Water-1/2 Cup
- Oil- For deep Frying
For Spicy Pani ( Flavoured Water)
- Coriander leaves-1 cup
- Mint leaves-1/2 cup
- Green chillies-2 (adjust to taste)
- Tamarind pulp-2 tbsp
- Black salt-1 tsp
- Roasted cumin powder-1 tsp
- Chaat masala-1 tsp
- Lemon juice-1 tbsp
- Cold Water- 4–5 cups
- Pani Puri Masala -1 tsp
For Tamarind Chutney:
- Tamarind Pulp- 1/2 Cup
- Jaggery-1/2 Cup
- Salt- 1/4 tsp
- Cumin- 1/2 tsp
For Potato Filling :
- Boiled potatoes – 2 medium (mashed)
- Onion – 1 small (finely chopped)
- Boiled chickpeas or white peas -1/2 Cup (optional)
- Chat Masala- 1/2 tsp
- Salt – According to Taste
- Coriander (optional)
Instructions For How To Make Golgappe:
Step -1 Making the Puris
Make The Dough
- In a bowl add Wheat flour, Semolina and Salt.
- Add little by little warm water and knead for 8-10 minutes until the dough become smooth.
- Cover with wet cloth and rest it for 20-30 minutes.
Roll and Cut
- Knead the dough once more and divide it into two balls .
- Roll each ball into very thin sheet it must be thinner than chapati.
- Use small round cutter to cut circles.
Fry
- Heat oil on medium‑high flame. Drop a tiny puri circle pieces into hot oil and it should rise quickly.
- Slide the puri circles in 3–4 at a time so that they become puff, flip and fry until golden.
- Drain the Puris on paper towels. Let them cool completely so that they’ll turn extra crisp.
Step-2 Preparing Pani
For Spicy Water
- Take a mixer jar add coriander, mint, chillies, tamarind pulp, black salt, cumin powder, and ½ cup water to make a smooth paste.
- Starin it for the clear Water.
- Add the paste to a large bowl, pour the cold water, chaat masala, lemon juice, pani puri masala and salt.
- Add Ice for Chilled water or you can keep it in the fridge for 30 minutes.
For Tamarind Chutney
Add Tamarind pulp, jaggery, salt and cumin and simmer it until it becomes thick.
Step-3 For Potato Filling
- Take a bowl add all the ingredients (mashed potatoes, chickpeas, onion, chaat masala, and salt)
- Mix it well.
